Five Favorite Cocktails for a Beach Day on Bald Head Island

Summer on Bald Head Island equals fun in the sun and long days on the beach. Hand me a glass hosting a spiked fruity concoction with an umbrella hanging out on the rim and now it’s not just a vacation, it’s a fiesta! Here’s five of my favorite cocktails for a day on the beach. 

Mojito 

This Cuban cocktail is not only simple to make, it’s delicious. Place 10 mint leaves and one of four wedges from a half a lime into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add two more lime wedges and two tablespoons of white sugar. Muddle again to release the lime juice. Fill the glass almost to the top with ice. Pour one & a half ounces of white rum over the ice, fill the glass with carbonated water, garnish with a lime wedge and enjoy. Too much work? Margarita

I know, it’s easy to make Margaritas, but… is it easy to make a magnificent Margarita? This Mexican medley of goodness is the perfect beach day drink and I have a recipe that’s simple yet savory. Blend six ounce of Minute Maid Limeade, six ounces of Tequila, two ounces of Triple Sec, three ounces of water or more if needed and ice in a blender. Serve in a salted rim glass. Pina Colada

This frozen coconut creation goes hand in hand with summer. Fill blender halfway with ice. Add ½ cup of rum, ½ cup of coconut cream, ¼ cup of coconut milk and ¼ cup of pineapple chunks then puree. Sangria Slushies 

When it’s too hot for wine Sangria Slushies will do just fine! Pour a bottle of red wine in empty ice cube trays and freeze overnight. Combine red wine ice cubes, 1/3 cup of Brandy, ¼ cup of freshly squeezed orange juice and two tablespoons of honey. Blend until smooth and pour into glass. Garnish with orange and lime slices.  

Caipirinha

This refreshing Brazilian blend of yumminess is the perfect drink for the beach. Cut half of a lime into small wedges and place into an old-fashioned glass along with two teaspoons of sugar. Muddle well then add a few ice cubes. Top the drink with two ounces of cachaça and stir well.
